Tocosh is called to a certain fermented Andean potato. Used in some areas of the Andes as a natural probiotic, recommended for people with gastritis and infections of the gastrointestinal system.
The Incas used this potato ferment which they called tocosh as an aid to cope with infections and strengthen their body. The fermentation of this potato generated a type of bacteria that increased the body’s immunity.
Since the time of the Incas, potatoes were fermented in water for months. This procedure has continued to be carried out in many towns in the Andes of Peru.
