The Shiitake mushroom (Lentinus Edodes) has been cultivated for centuries in the mountainous regions of Asia (especially China, Japan and Korea). Today, it is cultivated in many countries. It is usually very appealing to our taste in cooking and for its health properties.
Since the Ming Dynasty in China it has been consumed to maintain health, improve circulation, cure colds and reduce blood cholesterol levels.
Thanks to their pepsin and trypsin enzymes, it promotes digestion and thanks to its antioxidant properties it is an excellent anti-aging food.
Shiitake provides linoleic acid, which manufactures various types of prostaglandins. It also contains Ergo sterol, a nutrient that has the ability to become vitamin D when combined with exposure to sun which is an important to assimilate phosphorus and calcium.
