Matcha green tea is a powdered tea that has been used in traditional Japanese tea ceremonies for nearly a millennium. It is made from Camellia Sinensis tea leaves. The best tea plants are picked and dried to create the finely ground powder. It has a unique and characteristic taste, with a touch of bitterness. Matcha tea can also be used as a food ingredient and natural food coloring.
The preparation begins several weeks before its harvest. First the tea plants are covered to hide them from the sun. This delays their growth and creates a darker green color in the leaves. With this process the tea gets amino acids creating a sweeter tea. After harvest, the leaves are placed on a flat surface to dry. The stem and veins are removed before grinding them to a fine, deep green powdery texture known as “matcha”.
Presentation:
Ingredients: 100% leaves of the organic matcha green tea plant (Camellia Sinensis).
Use: 1/2 teaspoon per cup (1 gram approximately), add boiling or very hot water and stir.
Precautions: Store in a cool, dry place away from light. It should not be consumed by children under 12 and pregnant or breastfeeding women, due to caffeine.
